- 3 egg whites
- 150 g icing sugar
- Pastry bag with a star tip
Whip the egg whites until slightly stiff (10 sec.)
Add the sugar and whisk until the mixture is sturdy (about 7-10 min.)
Put the mixture in the bag and form the nests on a cookie sheet.
Bake the nests in the oven at 212F (100C) for 1.5 to 2 hours. (If they start to go brown, turn down the heat.)
- 3 egg yolks (if the eggs are organic and fresh, I cannot see any reason why they should be pasteurized)
- 2-4 Tbsp. mascarpone
- Icing sugar (approx. 50 g, 1.8 oz)
Beat the yolks light and fluffy (about 5 min.)
Take a bit of egg-mixture into the mascarpone and stir them together.
Take the mascarpone-mixture back to the eggs and add some of the icing sugar (through a sieve to prevent lumps)
Mix it gently together, so the air mass is preserved.
Be sure to taste it, and add sugar if not sweet enough.
- Beautiful freshly-picked strawberries (500 grams, 18 oz).
(you can put your favorite kind of liqueur on the berries – soak the berries for a few hours)
All three parts are put together like the in picture, immediately before it is served.
Remember it must be delicious and elegant, so be sure to avoid overfilling the plates.
